Welcome to the SU Fit Club Blogspot
This will be the place where we can gather to see what is up, what is working, what could work, and even what didn't work. This is where we can BLOG ALOT!!!!
Yay, Fit Club! Here are two quick lunch recipes that are my favorites (they are actually variations on one another):
Black & White Bean Salad (serves 4) 16 oz. can of black beans, rinsed & drained 16 oz. can of white beans, rinsed & drained 1 small onion, chopped 1 large tomato, seeded and diced 1 stalk of celery, chopped 1 tablespoon white wine vinegar Chopped italian parsley or dried parsley salt & pepper
Mix it all!
Bean & Avocado salad (serves 2) 16 oz. can of white beans, drained & rinsed 1/2 avocado, chopped 1 tblsp. fresh lemon juice 10 cherry/grape tomatoes, cut into quarters 1 tblsp. fresh basil, chopped salt & pepper
It was great meeting you all today! Remember to stay hydrated and no sugar--but yes to fruit.
Some food menus will be posted soon (thanks for scanning them in Kim and Kimele). The meals should be breakfast, snack, lunch, snack, and dinner. Feel free to switch things around. There are some weeks with a lot of tuna. Tuna has high mercury levels and it is recommended to limit to one serving per week. I don't use any artificial sweetners. More to come later!
